Along with the audio recordings of these missions, are there any data/telemetry recordings still surviving, and any plans to create representations of the mission telemetry back to Mission Control?

Years ago I bought an Apollo 13 CD program which has a lot of the audio loops, plus simulations of what the telemetry data did during the explosion and after. 

I am pretty sure the data was recorded too; wouldn't it be interesting to see some of that?

Sadly, no. All mission telemetry tapes were recycled years ago.
